Curried Red Lentils

Ingredients (serves 4)
  • 1 Lb Dry Red Lentils
  • 2 Tbs Olive Oil
  • 2 Shallots, diced
  • 2 Cloves Garlic, minced
  • 2 tsp Ground Ginger
  • 1/2 tsp Ground Cumin
  • Ground Yellow Curry, to taste
  • 4 Cups vegetable broth or water
  • 2 Tbs Fresh Cilantro, chopped
  • Salt and Pepper, to taste
Sort and wash lentils; set aside. Heat oil in a large skillet. Add shallots and garlic. Cook until tender. Stir in ginger, cumin, and curry. Cook and stir 1 minute. Add remaining ingredients and lentils. Bring to a boil. Reduce heat, cover and simmer 20 minutes (stirring occassionally) or until lentils are tender. Add more hot water if needed. Serve over steamed brown rice with steamed green beans or veggie of choice.
